Wild Rice Salad With Spinach And Figs - cooking recipe

Ingredients
    2 cups wild rice blend
    3/4 cup coarsely chopped pecans
    8 None dried figs, thinly sliced
    2 cups baby spinach leaves
    2 None green onions, thinly sliced
    2 tsp finely grated orange peel
    4 None fresh figs, quartered, for garnish
    None None FOR THE ORANGE BALSAMIC DRESSING
    1/2 cup orange juice
    2 tbsp olive oil
    1 tbsp white balsamic vinegar
Preparation
    Cook rice, uncovered, in a large saucepan of boiling water until tender; drain. Rinse under cold water; drain. Place in large bowl.
    Meanwhile, for the dressing, whisk orange juice, olive oil and balsamic vinegar in a small bowl.
    Add dressing and remaining ingredients to rice; toss gently to combine. Serve topped with fresh figs.
