Blt Spinach Saute - cooking recipe
Ingredients

4 None slices bacon, roughly chopped
2 tbsp balsamic vinaigrette
1 pkg (10 oz.) leaf spinach, stems removed
1 None small red onion, peeled and cut into very thin wedges
2 None medium tomatoes, cut into thin wedges
Preparation

In a large skillet, over medium heat, cook bacon for 4 mins or until crisp, stirring occasionally. Using slotted spoon, remove bacon and drain on paper towels.
Remove all but 2 tablespoons bacon drippings from the pan. In a skillet with bacon drippings, over medium heat, cook onion for 3 minutes stirring occasionally.
Add balsamic vinaigrette, tomatoes and spinach. Cook for 1 min or until heated through and spinach just starts to wilt. Season with salt and ground black pepper. Arrange spinach, tomatoes and red onion on a serving platter. Top with bacon.
