Red Cabbage Salad With Macadamias - cooking recipe

Ingredients
    1/2 cup cider vinegar
    4 tbsp oil
    3-4 tsp honey
    1 3/4 lbs (half head) red cabbage, cut into thin strips
    1 None large apple, cored and thinly sliced
    1-2 tbsp lemon juice
    2/3 cup macadamia nuts, coarsely chopped
    1/3 cup cranberry jelly
Preparation
    Mix the vinegar, oil and honey. Mix with the cabbage, season to taste and toss for 3-4 mins and leave to marinade for about 30 mins. Toss apple slices with lemon juice.
    Toast the nuts in a dry skillet. Fold the apple slices and cranberry jelly into the dressed cabbage. Serve on 4 plates, sprinkled with nuts, with a baguette on the side.
