Creamy Potato Salad - cooking recipe

Ingredients
    4 None red potatoes, washed, cut into chunks
    3/4 cup mayonnaise
    1/2 None lemon, juiced
    2 tbsp fresh mint, chopped + mint leaves, to serve
    2 tsp Dijon mustard
    2 None spring onions, thinly sliced
Preparation
    Place potatoes in a large pot. Cover with cold water. Bring to a boil, covered, then partially remove lid and cook for 8-10 mins, or until just tender. Drain. Toss with mayonnaise, lemon juice, chopped mint, mustard and spring onions. Season. Serve warm or cold, topped with mint leaves.
