Potato And Sweet Potato Casserole - cooking recipe

3 tbsp butter
1/4 cup all-purpose flour
1 1/4 cups heavy cream, warmed
1/2 cup milk, warmed
1/4 cup Parmesan cheese, freshly grated
2 tsp fresh rosemary leaves, finely chopped
1 clove garlic, minced
1 1/4 lb potatoes, thinly sliced
1 1/4 lb sweet potatoes, thinly sliced
1 None medium onion, thinly sliced
1/2 cup Cheddar cheese, grated
None None mixed greens, to serve
Preparation

Preheat oven to 350\u00b0F.
Melt butter over medium heat. Add flour and cook for 1 min, or until bubbling. Gradually whisk in warm cream and milk. Bring to a boil and cook, stirring, for 3 mins, or until thick and smooth. Add Parmesan, rosemary and garlic. Cook for 1-2 mins, or until smooth.
Layer potatoes, sweet potatoes and onion in a large baking dish, drizzling 1/3 cup sauce between each layer. Pour remaining sauce over top. Cover with foil and bake for 45 mins. Remove foil and sprinkle Cheddar cheese over top. Bake for 30-35 mins, or until golden and potatoes are cooked through. Let cool for 10 mins. Serve with mixed greens.
