Twice Baked Potatoes With Cauliflower And Fresh Herbs - cooking recipe

Ingredients
    6 None medium baking potatoes
    1/2 cup cauliflower florets
    3 tbsp butter
    2 tbsp chicken broth
    1 tbsp chopped fresh chives
    1 tbsp chopped fresh parsley leaves
    1 tsp chopped fresh tarragon leaves
    1/8 tsp granulated garlic
Preparation
    Preheat oven to 350\u00b0F. Prick potatoes with a fork and bake for 1 hour, or until fork tender. Let cool for 5 mins then halve lengthwise. Scoop out flesh, leaving 1/4 inch-thick shell.
    Cook cauliflower in boiling salted water for 4 mins, or until tender. Drain. Mash with potato flesh, butter, broth, fresh herbs and granulated garlic. Season.
    Preheat broiler. Spoon mashed potato mixture into a pastry bag fitted with a large star tip and pipe into potato shells. Transfer to a baking sheet and broil for 1 min, or until golden brown.
