Cranberry Rock Cakes - cooking recipe

2 1/4 cups self-rising flour
1/3 cup granulated sugar
7 tbsp unsalted butter, chopped
4 oz dried craisins/cranberries
1/4 cup flaked coconut
3.5 oz white chocolate, finely chopped
1 None large egg, lightly beaten
1/2 cup 2% milk
1 tsp vanilla extract
1 tbsp demerara sugar
Preparation

Preheat oven to 400\u00b0F. Grease 2 baking trays.
Sift flour and sugar into a medium bowl. Cut in butter. Stir in craisins, coconut, chocolate, egg, milk and vanilla until just combined. Drop heaped tablespoons of mixture about 2 inches apart onto prepared trays. Sprinkle with demerara sugar. Bake for about 15 mins. Let cool on trays.
