Caramelized Papaya Rice Pudding - cooking recipe

Ingredients
    1 litre milk
    200 g whipping cream
    None None Seeds of 1 vanilla pod
    1 None papaya, deseeded and diced
    Pinch None salt
    1 tbsp butter
    5 tbsp brown sugar
Preparation
    Add the milk, cream, vanilla seeds, half the papaya and pinch of salt to a saucepan and bring to a boil, stirring. Mix in the rice then cover and simmer over a low heat for 25-30 mins, stirring frequently.
    Preheat your oven's broiler. Mix the butter and 2 tbsp sugar into the rice then remove from the heat. Fold in the remaining papaya. Transfer to a baking dish and sprinkle with the remaining sugar. Broil for 3-4 mins until the sugar has caramelized and serve hot.
