Honey And Mustard Roast Chicken With Root Vegetables - cooking recipe

1 lb carrots, trimmed and chopped
1 1/8 lb potatoes, peeled and chopped
4 None small onions, diced
2 1/4 lb whole chicken
3 tbsp honey
3 tbsp Dijon mustard
1 None green onion, sliced
5 oz herb cream cheese
1 tbsp milk
None None Parsley, to garnish
Preparation

Preheat the oven to 400\u00b0F. Mix the carrots, potatoes and onion together and season. Season the outside of the chicken then place in a roasting pan. Arrange the vegetables around it. Roast for 1 hour - 1 hour 10 mins or until 160\u00b0F. Turn the vegetables occasionally and baste the chicken.
Mix the honey and mustard together. Brush the mixture over the chicken 20 mins before the end of cooking. Mix the green onion, cream cheese and milk together with a whisk until smooth. To serve, arrange the chicken and vegetables on a large plates and serve with the sauce on the side. Garnish with parsley before serving.
