Tomato Sauce - cooking recipe
Ingredients

4 1/3 lbs tomatoes, coarsely chopped
2 tbsp olive oil
2 None onions, peeled and diced
2 cloves garlic, peeled and finely chopped
10.5 oz carrots, peeled and diced
2 tbsp sugar

Preheat oven to 400\u00b0F. Spread out the tomatoes on a baking sheet and place in the oven to roast for 20 mins, checking frequently to ensure they are not burning.
Heat the oil in a frying pan and fry the onions and the garlic until the onions are translucent. Add the carrots and saute, stirring, then add the roasted tomatoes. Add the sugar and season to taste. Simmer for about 20 mins.
Take the pan off the heat and allow the sauce to cool, then pour it into a blender and process to a fine puree. Return the puree to the pan and bring it to a boil. Remove from heat and pour the sauce into clean, sterile jars, leave for 5 mins, then seal tightly. Makes 4 jars of about 14 oz each of sauce.
