Cherry And Almond Creams - cooking recipe

Ingredients
    14 oz fresh cherries, pitted
    1/2 cup sugar
    2 tbsp amaretto liqueur
    1 tub (8 oz) light spreadable cream cheese
    2 None egg whites
    4 None butter cookies, for serving
Preparation
    Combine the cherries with 1 tbsp each of the sugar and amaretto in a bowl. Let stand for 10 mins.
    Meanwhile, beat cream cheese, 2 tbsp sugar and remaining amaretto in a medium bowl with electric mixer until smooth.
    Beat the egg whites in a clean small bowl with electric mixer until soft peaks form. Gradually add the remaining 5 tbsp sugar, beating until the sugar is dissolved between additions. Fold the meringue mixture into the cream cheese mixture.
    Divide the cherries among four 1 1/2-cup serving glasses. Top with the cream cheese mixture. Serve with the cookies.
