Vegetarian Lettuce Wraps - cooking recipe

Ingredients
    3.5 oz rice vermicelli noodles, soaked in boiling water for 5 mins, drained, cut into 3 inch pieces
    4 None spring onions, thinly sliced
    1 None medium carrot, grated
    2 oz snow pea sprouts, trimmed
    3 tbsp fresh cilantro leaves, chopped
    1 (13.5 oz) can soy beans, rinsed
    1 (10.5 oz) can corn kernels, rinsed
    1/3 cup peanuts, finely chopped
    1/4 cup lemon juice
    2 tbsp sweet chili sauce
    2 tsp soy sauce
    2 tsp vegetable or peanut oil
    8 None iceberg lettuce leaves, trimmed
    None None lemon wedges, to serve
Preparation
    Toss noodles with onions, carrot, sprouts, cilantro, soy beans, corn and peanuts. Season. Whisk together lemon juice, chili sauce, soy sauce and oil. Toss with noodle mixture. Distribute between lettuce leaves.
    Serve with lemon wedges.
