Lumberjack Cake - cooking recipe

Ingredients
    2 None apples, peeled, cored and finely chopped
    1 cup finely chopped pitted dried dates
    1 tsp baking soda
    8 tbsp (1 stick) butter, softened
    1 tsp vanilla extract
    1 cup granulated sugar
    1 None egg
    1 1/2 cups flour
    None None FOR THE COCONUT TOPPING
    4 tbsp (1/2 stick) butter, chopped
    1/2 cup firmly packed brown sugar
    1/2 cup milk
    2/3 cup flaked coconut
Preparation
    Preheat the oven to 350\u00b0F. Grease deep 9-inch square baking pan; line bottom and sides with parchment paper.
    Combine apple, dates and baking soda in large bowl. Stir in 1 cup boiling water. Cover bowl with plastic wrap; let stand 10 mins.
    Meanwhile, beat butter, vanilla extract, granulated sugar and egg in medium bowl with electric mixer until light and fluffy. Add butter mixture to apple mixture; stir to combine. Add sifted flour; stir to combine. Pour mixture into prepared pan.
    Bake about 50 mins.
    Meanwhile, for the coconut topping, stir all ingredients in medium saucepan on low heat until butter melts and sugar dissolves.
    Carefully remove cake from oven. Using metal spatula, carefully spread warm topping evenly over cake. Return to oven and bake about 20 mins or until topping is browned. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
