Cheesy Ham And Avocado Potatoes - cooking recipe

Ingredients
    4 None baking potatoes
    1 tbsp olive oil
    5.25 oz ham, chopped
    1 None avocado, pitted, peeled, chopped
    1 None tomato, chopped
    2 None spring onions, sliced
    2-3 drops hot pepper sauce
    1 None lime, zested and juiced
    3 tbsp Parmesan cheese, grated
    None None sour cream, to serve
Preparation
    Preheat oven to 350\u00b0F.
    Coat potatoes in oil, season and wrap in foil. Bake for 45-60 mins, or until tender. Let cool slightly. Unwrap and cut a slit halfway through each potato. Place on a foil-lined baking tray.
    Toss together ham, avocado, tomato, spring onions, hot sauce, lime zest and lime juice. Season. Distribute between potatoes and sprinkle with Parmesan. Bake for 5 mins, or until hot and cheese is melted.
    Serve with a dollop of sour cream.
