Peanut Butter Steak Roulades With Basmati Rice - cooking recipe
Ingredients

1/2 lb basmati rice
8 - 3 oz minute steaks, pounded thin
3/4 cup smooth peanut butter
1 lb spring onions, 1 thinly sliced, remainder cut into rough chunks
3-4 tbsp oil
1 None red bell pepper, deseeded and cut into thin strips
1 1/4 cup vegetable stock
1/3 cup soy sauce
Preparation

Cook the rice in boiling salted water according to the package instructions.
Season the steaks then spread evenly with 1/2 cup of the peanut butter. Place 4 spring onion chunks in the center of each steak then roll up tightly. Heat the oil in a frying pan and sear the steaks, turning, until cooked to your liking. Remove from the pan and set aside.
Add the pepper and remaining spring onion chunks to the pan and saute until softened. Season then add the stock and soy sauce and bring to a boil. Stir in the remaining peanut butter. Add the steak roulades, cover and simmer for 2 mins.
Drain the rice and arrange on plates with the roulades. Sprinkle with the sliced spring onion.
