Curried Beef, Potato And Cauliflower Hand Pies - cooking recipe

1 tbsp oil
1 None small onion, chopped
7 oz ground beef
1 tsp curry powder
1 None potato, diced
4 oz cauliflower florets
2.5 oz peas
2 sheets frozen puff pastry, thawed
1 None large egg, lightly beaten
None None salad, to serve
Preparation

Preheat oven to 400\u00b0F. Line a large baking tray with parchment paper.
Heat oil in a large frying pan over medium heat. Saute onion for 4-5 mins, until tender. Increase heat to high and add ground beef. Brown for 4-5 mins, stirring to break up any lumps. Add curry powder. Cook, stirring, for 1 min. Stir in vegetables and 1/2 cup water. Bring to a boil then reduce heat to low and simmer, covered, for 10 mins, or until potato is tender. Set aside to cool.
Cut each piece of puff pastry into 4 squares. Divide beef mixture between squares then fold dough over to form triangles. Press edges with a fork to seal. Place on prepared tray and brush with egg. Bake for 15-20 mins, or until puffed and golden. Serve with salad.
