Orange Wasabi Tuna And Noodles - cooking recipe

Ingredients
    1 tsp wasabi paste
    1/4 cup orange juice
    1 tbsp soy sauce
    2 tsp rice wine vinegar
    1/2 tsp sesame oil
    9 oz udon noodles
    3/4 inch fresh ginger, peeled, finely grated
    10.5 oz fresh tuna steaks
    2 tbsp sesame seeds
    1 tbsp vegetable oil
    3.5 oz bean sprouts
    1 None orange, peeled, segmented
    2 None spring onions, finely sliced
Preparation
    To make the dressing, whisk together wasabi paste and 2 tsp orange juice. Whisk in remaining orange juice, soy sauce, rice wine vinegar and sesame oil. Set aside.
    Cook noodles according to package instructions. Rinse under cold water until cool then drain. Transfer to a large serving bowl.
    Meanwhile, rub ginger over tuna then roll tuna in sesame seeds to coat. Season to taste.
    Heat oil in a large frying pan over medium heat. Sear tuna for 1 min per side, or until cooked to your liking. Set aside, loosely covered with foil, to rest for 5 mins. Using a sharp knife, cut into thin slices.
    When ready to serve, pour dressing over noodles. Add bean sprouts, orange segments and spring onions, tossing to combine. Serve topped with tuna.
