Gingerbread Cookies - cooking recipe

Ingredients
    1/2 cup butter, chopped
    1/2 cup granulated sugar
    1 None egg yolk
    2 1/4 cups all-purpose flour
    3 tsp ground ginger
    1 tsp baking soda
    1/4 cup honey, warmed
    None None Icing
    1 None egg white
    1/4 cup powdered sugar, sifted
    2-3 drops lemon juice
Preparation
    Preheat oven to 350\u00b0F. Lightly grease and line 2 baking trays with parchment paper.
    Cream butter and sugar until light and fluffy. Add egg yolk and mix until combined. Sift flour, ginger and baking soda together onto a sheet of parchment paper then fold into batter along with warm honey. Gently knead on a lightly floured work surface. Roll out to 1/4 inch thick. Cut out gingerbread men shapes using floured cutters. Place on prepared trays and bake for 10-15 mins. Let cool on trays.
    Meanwhile, to make icing, whip egg white until frothy. Gradually add powdered sugar, beating well after each addition. Once icing reaches a pipeable consistency, mix in lemon juice. Decorate gingerbread cookies.
