Okonomiyaki (Japanese Savory Pancakes) - cooking recipe

Ingredients
    1/2 cup all-purpose flour, sifted
    2 tbsp vegetable oil
    8.75 oz ground pork or chicken
    6 None eggs, lightly whisked
    2 oz Chinese cabbage, finely shredded
    3 None spring onions, thinly sliced
    1/2 None red pepper, deseeded, finely sliced
    None None sweet soy sauce (kecap manis), to serve
Preparation
    Gradually whisk 2 cups water into flour. Mix until smooth. Cover and chill for 30 mins.
    Meanwhile, heat 2 tsp oil in a large frying pan over high heat. Add ground meat and cook for 4-5 mins, until browned. Set aside.
    Whisk eggs into batter until smooth. Fold in cabbage and 1/2 the spring onions. Heat 1 tsp remaining oil in an 8 inch nonstick frying pan over medium heat. Add 1/4 of the ground meat then pour 1/4 of the batter over top. Cook for 3-4 mins, until golden underneath. Flip and cook for another 2 mins, or until golden. Set aside. Repeat with remaining oil, ground meat and batter.
    Top each pancake with red pepper and remaining spring onions. Drizzle with sweet soy.
