Moroccan Beef And Lentil Salad - cooking recipe

Ingredients
    1 lb sweet potatoes, peeled and thinly sliced
    1/4 cup vegetable oil
    2 tbsp Moroccan seasoning
    10 oz beef sirloin steak
    1 medium red pepper, seeded and chopped
    1 medium red onion, thinly sliced
    1 can (14 oz) lentils, drained and rinsed
    3 oz baby rocket leaves
    2 tbsp lemon juice
    1 clove garlic, crushed
Preparation
    Cook sweet potato in a medium saucepan of boiling water for 3 mins. Drain. Place sweet potato in a large bowl. Drizzle with 2 tsp oil.
    Mix Moroccan seasoning and 2 tsp oil in a small bowl. Rub on beef.
    Heat a grill pan on medium-high heat or preheat the grill to medium. Grill beef for 3 mins each side for medium or until cooked to desired doneness. Transfer to a plate. Cover with foil; let stand for 5 mins. Slice beef thinly. Grill sweet potatoes for 3 mins until browned.
    Combine beef, sweet potato, pepper, onion, lentils and arugula in a large bowl. Whisk remaining oil with lemon juice and garlic; drizzle over salad. Toss to combine. Serve at once.
