Chicken Sandwiches With Basil-Caper Spread - cooking recipe

4 None chicken breasts, 4 oz each
2 tbsp sunflower oil
1/2 lb cream cheese
2 tbsp capers, drained and roughly chopped
2 sprigs basil, finely chopped
8 slices wholegrain bread, toasted
1/2 lb strawberries, thinly sliced
4 leaves romaine lettuce
Preparation

Season the chicken with salt and black pepper. Heat the oil in a frying pan and brown the chicken, turning, for 10-12 mins. Remove from the pan, cool and slice.
To make the spread, mix the cream cheese, capers and basil and season with salt. Spread on the bread.
To assemble, arrange the chicken, strawberries and lettuce on 4 of the bread slices and press the remaining slices on top. Cut in half diagonally and secure with toothpicks to serve.
