Chicken Casserole - cooking recipe
Ingredients

1 tbsp olive oil
4 None skinless chicken breast, cut into chunks
1 None onion, peeled, finely chopped
1 1/4 cups chicken stock
1 None sweet potato, peeled, cut into chunks
2.5 oz frozen peas
2.5 oz baby corn
1 1/2 tsp cornstarch, mixed with 1 1/2 tsp water until smooth
None None mashed potatoes, to serve
Preparation

Heat oil in a frying pan. Sear chicken for 4-5 mins. Add onion and cook for 1 min. Deglaze with stock, scraping up browned bits. Add sweet potato and simmer for 15 mins. Add peas and baby corn. Simmer for 5 mins. Add cornstarch slurry and simmer for 1 min.
Serve with mashed potatoes.
