Tomato, Prawn And Nectarine Salad - cooking recipe
Ingredients

4 tbsp oil
12 oz prawns, peeled
1 None lime, zested and juiced
1 1/2 lb ripe tomatoes, sliced
2 None nectarines, pitted and sliced
2 None onions, peeled and finely diced
3 oz lettuce, torn
1 bunch fresh chives, finely chopped
1/2 cup mayonnaise
1/2 cup sour cream
1 clove garlic, peeled and minced
Preparation

Heat 2 tbsp oil in a large pan, add prawns and saute for 3-4 mins, stirring occasionally, until pink. Season then remove from heat and let cool.
Whisk lime zest and juice and season. Add a pinch of sugar and whisk in remaining oil. Toss with tomatoes, nectarine, onion and lettuce and set aside for 10 mins. Add chives and prawns.
Mix mayonnaise, sour cream and minced garlic and season. Serve with salad.
