Ginger Lime Sorbet - cooking recipe

Ingredients
    3/4 cup sugar
    1 oz fresh ginger, cut into pieces
    4 None limes, zested, halved, juiced, rinds reserved in freezer, plus extra zest to serve
    1 None egg white
Preparation
    Heat 1 1/4 cups water in a pan. Add sugar, ginger and lime zest. Stir until sugar dissolves then simmer for 6 mins. Let cool.
    Remove ginger from sugar syrup then stir in lime juice. Freeze for 1 hour until partially frozen.
    Whip egg white until stiff then fold into partially frozen sorbet. Return to freezer for 4 hours, stirring every 30 mins, until appropriate sorbet texture forms.
    With an ice cream scoop, scoop out balls of sorbet and place on a tray. Freeze again for 1 hour. To serve, place sorbet in frozen lime halves. Sprinkle with lime zest.
