Bread And Tomato Soup With Basil - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None onions, finely chopped
    2 cloves garlic, crushed
    6 slices white bread, crusts removed, finely chopped
    4 cups chicken stock
    2 (13.5 oz) cans whole tomatoes
    2 tsp sugar
    2 tbsp fresh basil, shredded, to serve
    None None grated Parmesan cheese, to serve
Preparation
    Heat 1 tbsp olive oil over medium heat. Saute onions and garlic for 1-2 mins. Add breadcrumbs and cook for 3-5 mins, stirring, until starting to brown. Add chicken stock, tomatoes and sugar. Season. Simmer for 5-10 mins. Let cool slightly then puree until smooth.
    Serve topped with basil and Parmesan.
