Beet And Goat Cheese Tart - cooking recipe

Ingredients
    1 sheet frozen puff pastry, thawed
    5.25 oz goat cheese
    1/3 cup olive oil
    16 oz jar baby beets, drained, thinly sliced
    2 tbsp red wine vinegar
    1 tbsp fresh chives, finely chopped
    None None baby arugula, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper.
    Place puff pastry on prepared tray. Fold in each side to form a 1/3 inch border. Bake for 10-15 mins, until puffed and golden. Press down center halfway through cooking to remove air.
    Combine goat cheese with 1 tbsp oil, season then spread over pastry. Arrange beet slices over top. Whisk together remaining oil and vinegar. Season. Drizzle over tart. Sprinkle with chives.
    Serve with baby arugula.
