Warm Bean Salad With Goat Cheese - cooking recipe

Ingredients
    1/4 cup olive oil
    3 None spring onions, finely sliced
    1 None carrot, diced
    1 stalk celery, diced
    1 None red pepper, diced
    1 (15 oz) can mixed beans, rinsed, drained
    7 oz baby spinach
    2 tbsp fresh parsley leaves, chopped
    2 tsp balsamic vinegar
    4.5 oz goat cheese
Preparation
    Heat 2 tbsp oil in a large frying pan over medium heat. Cook spring onions for 2 mins, stirring, until softened. Add carrot, celery and pepper. Cook for 5 mins, until softened. Remove from heat and toss with beans, spinach and parsley. Add vinegar and remaining olive oil and toss to combine. Season.
    Crumble goat cheese over salad. Serve.
