Apricot Croissant Bread Pudding - cooking recipe
Ingredients

2 tbsp butter, at room temperature
4 medium croissants
3/4 cup apricot jam
1 1/4 cups light cream
1/2 cup milk
2 None eggs, lightly beaten
2 tbsp custard powder or vanilla cook & serve pudding mix
1 tbsp sugar
1 tsp vanilla extract
None None Vanilla ice cream, to serve
Preparation

Preheat the oven to 400\u00b0F. Grease an 8-inch square baking dish with butter. Cut croissants lengthwise into thin slices. Spread one side of each slice with jam. Layer slices in prepared dish.
Place cream, milk, eggs, custard powder, sugar and vanilla in a medium saucepan on medium heat. Whisk until smooth. Cook and stir for 2 mins, or until mixture just comes to a simmer and thickens slightly. Pour custard mixture evenly over croissants.
Bake for 15 mins, or until golden and custard is just set. Let stand for 5 mins. Serve warm with ice cream, if desired.
