Warm Chicken Sandwiches - cooking recipe
Ingredients

1 tbsp olive oil
2 None medium chicken breasts, halved horizontally
6 None anchovy fillets, 2 chopped, 4 left whole
4 tbsp light mayonnaise
2 tbsp fresh chervil, little reserved for garnish, remainder finely chopped, or flat leaf parsley
1 oz Parmesan, shaved
4 None ciabatta rolls, halved
8 leaves romaine lettuce
2 None tomatoes, sliced
Preparation

Heat the oil in a non-stick skillet and cook the chicken for 3-4 mins, until browned and cooked through. Season with salt and black pepper. Remove from the pan and drain on paper towel.
Mix the chopped anchovies, mayonnaise, chervil and three-quarters of the Parmesan. Spread half the mixture over the bottom halves of the rolls. Top with the lettuce, chicken and tomatoes. Spoon over the remaining mayonnaise mixture and put on the tops of the rolls. Garnish with the remaining chervil and anchovies.
