Candy Apples - cooking recipe

Ingredients
    12 small apples, stems removed
    12 None wooden lollipop sticks
    4 cups sugar
    1/2 cup light corn syrup
    1 tsp red food color
Preparation
    Line a baking pan with parchment paper. Insert a lollipop stick into the bottom of each apple.
    Heat the sugar, corn syrup and 1 cup water in a medium saucepan, stirring, until sugar has completely dissolved, brushing sugar crystals from the sides of the pan with a wet pastry brush. Bring to a boil, without stirring. Cook for 15-20 mins, until it reaches the 'hard crack' stage on a candy thermometer (300-310\u00b0F).
    Stir in the food color, then wait for the bubbles to subside. Tip the pan to one side and dip the apples in the syrup mixture, being sure to coat them evenly. Dip immediately into a bowl of cold water to set the candy. Place on the prepared pan and let stand to set.
