Date And Apricot Loaf Cake - cooking recipe

2/3 cup firmly packed brown sugar
9 oz dried pitted dates, coarsely chopped
6 oz dried apricots, coarsely chopped
7 tbsp butter, coarsely chopped, plus extra to serve
1 tsp baking soda
1/2 cup self-rising flour
1 None large egg, lightly beaten
Preparation

Preheat oven to 350\u00b0F. Grease and line an 8x4 inch loaf pan with parchment paper, extending paper at long sides for handles.
Combine sugar, dates, apricots, butter and baking soda in a medium saucepan. Add 1 cup water. Bring to a boil then remove from heat. Let cool for 5 mins then add flour and egg. Stir until just combined. Transfer to prepared pan and smooth surface. Bake for 45-50 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
Slice and serve with butter.
