Bifteki Skewers With Greek Salad - cooking recipe

Ingredients
    4 tbsp white wine vinegar
    1 tsp dried oregano
    6 tbsp olive oil
    1 lb mixed peppers, deseeded and diced
    1 lb tomatoes, diced
    3/4 lb cucumber, diced
    2 None sliced onions, plus 1 diced onion
    2 oz black olives
    3 tbsp parsley, finely chopped
    1 lb ground beef
    1 None medium egg
    2 oz breadcrumbs
    Pinch None cinnamon
    1/4 lb feta, cut into 10 cubes
Preparation
    Mix the vinegar and oregano together and season. Whisk in 4 tbsp oil. Mix the pepper, tomato, cucumber, 2 sliced onions and olives with the vinaigrette. Set aside.
    Place the diced onion, parsley, beef, egg, breadcrumbs and cinnamon in a mixing bowl and season. Knead until smooth then form into 10 oval-shaped meatballs then flatten them slightly. Thread the cheese onto skewers and form the meatballs tightly around the cheese.
    Heat 2 tbsp oil in a frying pan, add the meatball skewers and fry for 8-10 minutes, turning. Divide the salad and skewers between 4 plates then serve.
