Cauliflower And Ground Beef Salad - cooking recipe

Ingredients
    1/2 head cauliflower, cut into florets
    1/2 None courgette, sliced
    1 None yellow pepper, deseeded and diced
    150 g cherry tomatoes, halved
    2 None small red onions, peeled and finely sliced
    4 stems flat-leaf parsley, chopped
    2 tbsp canola oil
    200 g minced meat
    75 g soured cream
    2-3 tsp sambal oelek
    3 tbsp white wine vinegar
    4 tbsp olive oil
Preparation
    Blanch cauliflower florets in boiling salted water for 5 mins. Drain.
    Heat 1 tbsp canola oil in a pan. Brown ground beef for 5-6 mins. Season then let cool.
    Heat remaining canola oil in a pan. Saute onions, zucchini, peppers and tomatoes for 4 mins. Season then let cool.
    For the dressing, combine sour cream, vinegar and sambal oelek. Gradually whisk in olive oil and season. Toss with cauliflower, ground beef and vegetables. Sprinkle with parsley.
