Ingredients

3/4 cup sugar
2 pieces fresh ginger, sliced thinly
2 stems fresh mint
2 strips lime peel
1 small red papaya (about 1 1/2 lbs), peeled, seeded and thinly sliced
2 medium mangoes (about 2 lbs), peeled, seeded and chopped coarsely
2 None limes, peeled and thinly sliced
12 None lychees, peeled and seeded
Preparation

Place sugar, 1 cup water, ginger, mint and lime peel in a medium saucepan. Cook and stir on low heat until the sugar is dissolved. Bring to a boil on high heat. Reduce heat to low and simmer, without stirring, for 10 mins. Strain into a bowl; cool for 10 mins. Refrigerate, covered, until cold.
Just before serving, place fruit in a large bowl. Drizzle with syrup; toss gently to coat
