Bacon-Cheddar Hash Browns With Fried Eggs And Roasted Cherry Tomatoes - cooking recipe

Ingredients
    10 oz cherry tomatoes
    2 tbsp olive oil
    2 lb potatoes, peeled, chopped
    4 slices bacon, finely chopped
    1 None small onion, finely chopped
    4.5 oz Cheddar cheese, grated
    1 tbsp fresh chives, finely chopped
    1 tbsp butter
    1 tbsp oil
    None None baby arugula, to serve
    None None fried eggs, to serve
Preparation
    Preheat oven to 350\u00b0F. Coat tomatoes in olive oil. Season and roast for 15-20 mins, until starting to collapse.
    Meanwhile, cook potatoes in boiling salted water for 10-15 mins, until tender. Drain then mash. Set aside to cool slightly.
    In a medium frying pan, cook bacon and onion for 4-5 mins, until tender. Mix with mashed potato. Add cheese and chives. Season then form into 10 patties.
    Heat 1/2 tbsp butter and 1/2 tbsp oil in a medium frying pan over high heat. Fry 5 patties for 4-5 mins per side until tender and golden. Drain on paper towels. Repeat with remaining butter, oil and patties.
    Serve with tomatoes, arugula and fried eggs.
