Vegetable Sandwiches With Cilantro Salsa - cooking recipe

None None FOR THE CILANTRO SALSA
1 bunch cilantro, chopped
2 tbsp chopped mint leaves
2 tsp grated fresh ginger
1 small green chili pepper, seeded and chopped
1 tbsp lemon juice
None None FOR THE SANDWICHES
8 slices whole-grain bread
2 tbsp butter, at room temperature
2 None tomatoes, sliced
1/2 small red onion, thinly sliced
1/2 None cucumber, sliced
1 None carrot, grated
Preparation

For the cilantro salsa, combine all ingredients in a food processor. Process until smooth, adding a little water if necessary.
For the sandwiches, spread bread with butter. Spread 1/2 the salsa on 4 slices. Top with tomato, onion and cucumber. Top with remaining salsa, grated carrot and remaining bread. Cut sandwiches into quarters.
