Bean Burritos With Red Pepper Salsa - cooking recipe

Ingredients
    1/2 tbsp olive oil
    1 None onion, finely sliced
    2 None red pepper, cut into thin strips
    42 oz canned red kidney beans with no added salt, rinsed, drained
    1 clove garlic, crushed
    1 None lime, zested and juiced, plus lime cheeks to serve
    8 None large flour tortillas
    4 oz Cheddar cheese, grated
Preparation
    Preheat oven broiler to high. Heat 1 tbsp olive oil in a frying pan on medium. Cook onion and half of red pepper 3-4 mins, until onion softens. Add half of beans and cook 2-3 mins, until heated through. Season.
    For the salsa, combine garlic, lime zest and juice, and remaining red pepper and oil. Season to taste.
    Place remaining beans in a bowl and crush with a fork. Season to taste. Spoon into the center of tortillas and top with the cooked bean mixture and half of the cheese. Roll to enclose filling and place on a baking sheet. Sprinkle with remaining cheese and broil 2-3 mins, until cheese melts. Top with salsa and serve with lime cheeks.
