Blue Cheese And Fava Bean Pasta - cooking recipe

Ingredients
    1 lb frozen fava beans
    13 oz fresh orecchiette pasta or other short cut pasta
    3 oz Gorgonzola or other blue cheese
    6.5 oz mascarpone cheese
    1 bunch fresh chives, snipped
    None None mixed greens, to serve
Preparation
    Cook fava beans in boiling, salted water for 2 mins. Drain then rinse under cold water until cool. Peel.
    Meanwhile, cook pasta in boiling, salted water until al dente. Drain.
    Combine Gorgonzola and mascarpone in a saucepan over low heat. Cook for 5 mins, stirring, until combined. Add fava beans and cook for 2 mins, until heated through. Add pasta and chives and toss to combine. Season.
    Serve hot with mixed greens.
