Spicy Chicken And Corn Soup - cooking recipe

Ingredients
    1 None onion, finely chopped
    1 None bird's eye chili pepper, seeded and finely chopped
    2 tbsp flour
    3 cups chicken stock
    1 lb boneless skinless chicken breasts, cut into thin strips
    4 ears corn on the cob, kernels removed
    1 cup milk
    2 tbsp freshly chopped parsley
    None None Whole grain bread, to serve
Preparation
    Spray the bottom of a saucepan with no stick cooking spray and heat on medium. Add the onion and chili pepper and cook for 3 mins, until soft. Stir in the flour and cook for 1 min. Whisk in the stock and 1 cup water. Bring to a simmer then add chicken. Simmer 3 for mins.
    Add the corn kernels and milk and simmer for 7 mins, until the corn is tender and chicken is cooked through. Add the parsley and season to taste. Serve with whole grain bread.
