Classic Pavlova - cooking recipe

4 None egg whites
1 cup sugar
1 tsp lemon juice
1/2 tsp vanilla extract
1 1/4 cups heavy cream, whipped
1 cup raspberries
1 cup blueberries
2 None passionfruits
Preparation

Preheat the oven to 300\u00b0F. Line baking pan with parchment paper.
Beat egg whites in large bowl with electric mixer until soft peaks form. Beat in sugar, 1 tbsp at a time, until dissolved and foam is stiff, thick and glossy. Beat in lemon juice and vanilla.
Spread onto prepared pan to form a 9-inch mounded circle.
Bake for 30 mins. Reduce oven to 250\u00b0F, and bake for further 45 mins. Allow to cool in a turned-off oven, with door open, to dry completely.
Just before serving, top with whipped cream and berries. Scoop out the seeds and juice from the passionfruit and drizzle over the top.
