Turkey Burritos - cooking recipe
Ingredients

1 tbsp olive oil
1 None onion, chopped
12 oz ground turkey
1 None red pepper, seeded and chopped
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 cup chicken stock
4 None large flour tortillas, warmed according to pack instructions
1/2 None iceberg lettuce, shredded
1 None tomato, sliced
1/2 cup grated Cheddar cheese
None None Lime wedges, to serve
None None FOR THE GUACAMOLE
1 None avocado, pitted and peeled
1 tbsp lemon or lime juice
1 None tomato, finely diced
Preparation

Heat oil in large skillet on high heat. Saute onion for 1-2 mins, until tender. Add ground turkey and brown for 3-4 mins, breaking up lumps as it cooks. Add pepper and spices and cook for 1 min. Pour in stock and bring to a boil. Reduce heat to low; simmer for 3-5 mins, until thickened.
For the guacamole, mash avocado with juice in a small bowl and season to taste. Stir in tomato.
Spoon turkey mixture evenly on tortillas. Top with lettuce, tomato, cheese and guacamole. Serve with lime wedges.
