Mini Strawberry Cakes - cooking recipe

Ingredients
    7 tbsp butter, melted
    3/4 cup self-rising flour
    1/2 tsp baking powder
    2 None eggs
    1/3 cup sugar, plus additional for sprinkling
    1 lb strawberries
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease eight 2/3-cup ramekins. Place on a baking sheet.
    Beat melted butter, flour, baking powder, eggs and sugar in a large bowl with an electric mixer on medium speed until smooth and creamy.
    Reserve 4 strawberries for garnish. Hull and quarter the remaining strawberries. Divide among the prepared dishes. Top with batter and sprinkle with additional sugar.
    Bake for 15-20 minutes until risen and golden. Halve the reserved strawberries and use to garnish each cake. Serve warm or cold.
