Parmesan And Pistachio Flatbreads - cooking recipe
Ingredients

1 1/2 bunches chives, finely chopped
200 g Parmesan, grated
50 g pistachios, coarsely chopped
6-8 tbsp olive oil
1 None spring onion, finely chopped
300 g plain flour
1 tsp baking powder
Preparation

For the pesto, puree pistachios, 2 oz Parmesan, 1 bunch chives and olive oil in a blender. Season, add spring onion and set aside.
Mix flour, baking powder, remaining Parmesan and chives and 1 cup water and season. Knead until smooth, cover, and let rest at room temperature for 30 mins.
Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Divide dough into 6 pieces then roll each out into an oval. Place on the prepared baking tray and spread each one with 1 tsp pesto. Bake for 10-15 mins until golden. Garnish with chives.
