Grilled Chicken Sanwich With Lime And Cilantro Mayo - cooking recipe

Ingredients
    2 None large skinless chicken breasts, sliced in half lengthwise
    4 strips Canadian bacon
    1 None focaccia cut into 4, each piece halved
    2 None tomatoes, sliced
    4 None large leaves iceberg lettuce
    -1 None Lime and Cilantro Mayonnaise
    4 tbsp mayonnaise
    1 tbsp cilantro, chopped
    1 tbsp lime juice
Preparation
    Preheat the grill or grill pan. Season chicken with salt and pepper to taste. Cook the chicken and bacon on the grill for 3-4 mins each side, until chicken is cooked through and bacon is crisp. Set aside and cover to keep warm.
    Grill bread, on the cut-side, for 1-2 mins, until golden.
    For the lime and cilantro mayonnaise, combine mayonnaise, cilantro and lime juice in a small bowl and season to taste.
    To assemble, place tomato and lettuce on bottom halves of bread. Top with grilled chicken, bacon and a dollop of mayonnaise. Top with another slice of bread and serve.
