Turkey And Sauekraut Stew - cooking recipe

Ingredients
    2 tbsp oil
    800 g turkey breast, chopped
    1 medium onion, diced
    2 medium leeks, sliced
    850 ml jar of sauerkraut
    500 ml vegetable stock
    2 tsp sambal oelek
    425 ml can of kidney beans, drained and rinsed
    3-4 stems parsley, chopped
Preparation
    Heat oil in a large pot over high heat and cook the turkey for 5-7 mins. Add the onions and leeks and saute for another 2-3 mins. Season with salt and pepper.
    Add the sauerkraut, turn the heat down to a simmer, and add the stock and sambal oelek. Cover and simmer for 15 mins.
    Add the beans and simmer for another 5 mins. Season to taste with salt and pepper and serve with a sprinkling of chopped parsley.
