Harissa And Tomato Shrimp With Feta - cooking recipe

1 tbsp olive oil, plus additional, for drizzling
1 medium onion, thinly sliced
2 cloves garlic, thinly sliced
1/4 cup dry white wine
1 1/2 lbs large shrimp, peeled and deveined, tails intact
2 tsp harissa
1 can (14 oz) diced tomatoes
2 tbsp currants
1 tsp sugar
2 cups couscous
4 oz feta cheese, crumbled
2 tbsp fresh flat-leaf parsley leaves
Preparation

Heat oil in a large, deep ovenproof skillet on medium heat. Cook onion and garlic, stirring, for 5 mins, or until tender. Add wine; cook on high heat for 30 seconds. Add shrimp and harissa; cook, stirring occasionally, for 2 mins. Add tomatoes, currants and sugar. Reduce heat to low; cook for 3 mins, or until shrimp are just cooked. Season.
Meanwhile, place couscous and 2 cups boiling water in a large bowl. Cover with plastic wrap. Let stand for 5 mins, or until water is absorbed. Fluff with a fork.
Preheat the broiler. Sprinkle feta over shrimp; drizzle with additional oil. Broil for 2 mins, or until feta is golden. Sprinkle with parsley. Serve with couscous.
