Crispy Pork Roast With Applesauce And Roasted Vegetables - cooking recipe

Ingredients
    4 1/2 lb 8-rib pork rib roast, skin scored
    1 tbsp coarse sea salt
    9 None baby onions, halved
    3 stalks celery, trimmed, cut into 8 pieces
    1/4 cup fresh flat-leaf parsley leaves
    None None Applesauce
    1 tbsp butter
    2 None shallots, peeled and thinly sliced
    2 None medium green apples, peeled, cored, thinly sliced
    3/4 cup dry cider
    1 tbsp sugar
    2 tsp lemon juice
Preparation
    Preheat oven to 475\u00b0F. Place pork in a large baking dish. Rub scored skin with salt. Roast pork, uncovered, for 25 mins, or until skin blisters. Drain excess fat from dish. Reduce oven to 350\u00b0F. Add onions and celery to baking dish and roast for another 45 mins, or until cooked to your liking.
    Meanwhile, to make the applesauce, heat butter in a saucepan and cook shallots until softened. Add apple and cook, stirring, for 2 mins. Add cider and bring to a boil. Cook, uncovered, for 1 min. Cover, reduce heat and simmer for 5-10 mins, or until apples are tender and cider has reduced slightly. Add sugar, lemon juice and 1 tsp salt. Blend until smooth.
    Remove pork and vegetables from oven. Cover pork with foil and let rest for 10 mins. Slice. Toss vegetables with parsley. Serve pork with applesauce and roasted vegetables.
