Zingy Papaya Salad - cooking recipe

Ingredients
    2 1/4 lb papayas, halved, seeded, flesh cut into thin strips, juice reserved
    1 None large plum tomato, seeded, diced
    2 tbsp fresh cilantro leaves, chopped, plus extra sprigs, to serve
    1 tbsp lime juice
    2 tsp fish sauce
    1 None small fresh red chili, seeded, thinly sliced
    1 tsp sugar
    2 tbsp roasted peanuts
Preparation
    Combine papaya, any juices, tomato, cilantro, lime juice, fish sauce, chili and sugar. Adjust seasoning.
    Arrange papaya on a serving plate. Sprinkle with roasted peanuts and cilantro. Serve.
