Good Old Fashioned Chicken Salad - cooking recipe

Ingredients
    4 cups chicken stock
    1 1/2 lb chicken breast fillets
    1 None French baguette, thinly sliced
    2 tbsp olive oil
    2/3 cup mayonnaise
    1/2 cup sour cream
    2 tbsp lemon juice
    4 stalks celery, thinly sliced
    1 None medium onion, finely chopped
    5 oz dill pickles, thinly sliced
    2 tbsp finely chopped fresh flat-leaf parsley leaves
    1 tbsp finely chopped fresh tarragon
    1 head lettuce, leaves separated
Preparation
    Preheat broiler. Bring stock and 4 cups water to a boil. Poach chicken, covered, for 10 mins, or until cooked through. Let cool for 10 mins then remove with a slotted spoon and thinly slice. Discard liquid.
    Meanwhile, brush both sides of bread slices with oil. Toast under broiler until lightly browned on both sides.
    Whisk together mayonnaise, sour cream and lemon juice in a small bowl. Combine chicken with celery, onion, pickles and herbs in a large bowl. Place lettuce leaves on a serving platter, top with chicken salad and bread then drizzle with mayonnaise dressing.
