Cheesy Slow Cooker Cauliflower - cooking recipe

4 tbsp butter, coarsely chopped
2 tbsp all-purpose flour
2 cups milk
5.25 oz Swiss cheese
1 head cauliflower, cut into florets
1 None yellow onion, peeled and finely chopped
1.5 oz Parmesan, finely grated
1/4 cup flaked almonds
2 tbsp flat-leaf parsley, coarsely chopped
Preparation

Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, for 2 mins or until the mixture thickens and bubbles. Gradually stir in the milk and continue to cook, stirring, until the sauce boils and thickens. Remove from heat and stir in the Swiss cheese until melted.
Place the cauliflower and onion into a 5-quart slow cooker and toss to combine. Season to taste. Pour over the cheese sauce and toss to coat. Sprinkle with Parmesan.
Cook, covered, on low, for 3 hours. Sprinkle with almonds and parsley to serve.
